With your Cinco de Mayo fiesta de las gringas just days away, it’s safe to say you need be shopping for something to match your maracas. Yet before you run off to find the impossible, a flattering vintage oaxacan dress with matching embroidered rhinestone flip flops, you’ve got to plan your menu. Comida is a must. No comida, no fiesta. That said, embrace the low key-ness of Cinco de Mayo. We’re not shooting for Thanksgiving dinner here, Chica! You don’t have to pull out the Easter lambchop (okay, I’ve never made an Easter Lamb chop…but let’s just pretend for post that I’m like you & Martha and have.) No, we don’t have to make our traditional Easter lamb chop for this holiday (thanks, for playing along). Cinco de Mayo is easy breezy. It embraces some of the most fun aspects of Mexican culture which include family, good friends, great food, and low stress. The focus is on togetherness, not perfection. My suggestion is to create a delicious and stress-free celebration, by ordering take out from your favorite authentic Mexican restaurant and then adding homemade side dishes to make it your own.
Here are three of my favorite Gringa Dips that are as easy as uno, dos, tres. I couldn’t decide which one to give you because they are all so easy and good. So start livin’ la vida loca and try all three!
Easy Black Bean and Corn Salsa
Ingredients
2 cans black beans
2 cans white corn drained
1 can Rotel with Green Chiles
Handful of fresh cilantro diced
6-8 limes squeezed
Directions: Drain and rinse black beans. Drain corn. Combine black beans, rotel, and fresh clinatro diced in a medium sized bowl. Squeeze fresh lime juice on top to taste. Serve.
No Fuss Guacamole
Ingredients
1 avocado, peeled and cut into 1/2-inch pieces
1 Tbsp. yellow onion chopped
1 clove garlic minced
1 Tbsp. fresh cilantro leaves minced
2 tsp. fresh lime juice
1/8 teaspoon salt
Directions
In a small mixing bowl, combine the avocado with the onion, garlic, cilantro, lime juice, and salt and mash with the back of a fork until mostly smooth.
No Fuss Layered Mexican Chip Dip
Ingredients & Directions
Layer following ingredients in order:
1 large can refried beans
1/2 pkg. taco seasoning (sprinkle over refried beans)
12 oz. sour cream
2 small avocadoes and 1 tsp. lemon juice
4 oz. can olives, chopped
chopped green onions
chopped green peppers
1 small can green chiles
4 large cups of shredded cheddar cheese
