At the End of the Day Rainbow

Generally, we would rather set out a healthy after-school snack, but this is one time we couldn’t resist breaking our own rules. Rule number one: Moms can break rules. So, make June Cleaver proud. These cookies are easier than finding a pot of gold, we promise!

First: buy a package of sugar cookie dough from the refrigerated section of your supermarket.
No Fuss Fabulous Tip: We know you have that perfect sugar cookie dough recipe. One day, when you have time, make the recipe and triple the batch. Divide it into sections and place in freezer bags. Date and toss into the freezer for a later date. The day before you want to bake the cookies, take the bag from the freezer and place in the refrigerator overnight.
Second: divide the sugar cookie dough into five separate bowls. One for each color: red, yellow, green, blue, and purple. If you want a kaleidoscope of colors add more bowls!
Third: Mix in enough food coloring to make a bright hue. Gel food coloring works better than liquid.
Fourth: Scoop 1/2 teaspoonfuls of dough and roll into balls.
Fifth: Cook according to directions.
Sixth: Arrange cookies into a rainbow on a plate.
Optional: Add whipping cream or marshmallows for clouds.
