1/2 cup of Key Lime Juice
1/4 cup of Sugar
1/4 tsp. grated lime rind
2 large eggs
1 (14 ounce) can sweetened condensed milk
1 can of Reddi-wip (or homemade whipped cream)
1 cup graham cracker crumbs (preferably cinnamon sprinkled)
Combine first five ingredients, stirring with a whisk until smooth, pour into top of a double broiler. Cook until mixture thickens (about 7 minutes) stirring constantly. Remove from heat. Let pot cool in refrigerator until mixture comes to room temperature.
Spoon 1 tablespoon whipped cream into chosen serving dishes. Top each serving with 1 tablespoon of graham cracker crumbs and 3 tablespoons of lime mixture. Repeat layers. Top with whipped cream and sprinkle with lime rind. Serve immediately.

Loralee’s Disclaimer: I don’t consider myself a chef by any stretch of the imagination. Yet in regards to the area of culinary prowess, I have done one thing very right. I’ve surrounded myself by cooking genius giants in hopes that they would rub off on me (or in the least, email me their recipes regularly). My mother is a perfectionist when it comes to food – hence her food looking so good you don’t want to eat it. My eldest sister is the scientist in the kitchen. She throws this and that in and “wala” something absolutely delightful is in front of you that your hopes of duplicating in the near future are slim to none. My younger sister is proof that it comes in the blood. I don’t remember a time she wasn’t baking or at least on the verge of baking something. And my best friend, well, she went on her mission to Italy and my diet has never been the same. The girl is fantastic in the kitchen and uses fresh everything. (I have already came up with her tomato sauce slogan when I convince her to go public. Watch your back, Classico.) Then there are my friends here in Texas who never let a party go by without wow-ing me with their dishes. Alyssa seems to whip things together in no time that never taste less than divine…and then emails me the recipe always with the phrase “it’s so easy” which leads me to believe that perhaps it just comes natural to her because not all of her recipes are so easy. And don’t get me started on Karin’s Key Lime Pie, Sharee’s homemade candy, and Lindsay I will never forget your strawberry chocolate fondue. It was great. Amy has a new recipe on her blog every other day that just looking at makes me gain weight. And let’s not forget, Becky Melton who makes fruit and cookie bouquets. Yeah, she just whips them up. I am so impressed. Well, needless to say most of the women I surround myself with are super fabulous in the kitchen. Which honestly just makes me really really smart. Yes, these women are the gateway to my kitchen success. Because although I have terrible luck with knives, there is one thing in addition to my associates that helps me in the kitchen. I call it gumption. And really is there anything you can’t achieve with good friends and gumption on your side?
