As the first of October arrives at our doorstep, every woman everywhere is beginning to solidify her soon-to-be holiday plans. If you are anything like me, October always seems to fly by and ‘surprise!’ the Holiday season is staring me in the face! With all the hustle, bustle, and excitement on it’s way, I try to make the Halloween season also my preparation period for Thanksgiving and Christmas. I’m not the lady who begins her Christmas baking 8 weeks early, but I do pick out my holiday cards, make sure I have my family photo session booked in time, and double-check dates of business Christmas parties in order not to have them land on personal parties! With new babies and busy-ness all around, I have also started to plan my small Christmas gifts for neighbors and friends.
I love to make homemade holiday cakes and cookies for friends and neighbors and give them as gifts. I think homemade keeps it simple and from the heart. Packaging seems to be the challenge. I want it to look “store bought” but at the same time for people to know it was made with love especially for them. Last year, I gave stacked Christmas cookies and fudge to friends and neighbors with ribbon. This year I am throwing around the idea of making our gourmet caramel and cinnamon apples or pumpkin cream cheese rolls. Either way though, my packaging is beyond cleared up this year. If you know me, you know I have an unhealthy obsession with personalization. I love monogramming everything and if I can put my daughter’s name on something, I do it. That’s why I just fell in love with this personalized ribbon I got the other day.
It is so cute and makes wrapping presents simple. I even made the above pumpkin roll to give to a friend just so I could use it! So I thought I had to share with you all. I don’t know how many times I have heard at baby showers or other events, “Oh! I forgot the card.” Or a puzzled bride, open a gift that she doesn’t know who is from. I think personalized ribbon is fabulous and makes life easier. You don’t need to worry about tags or cards. I purcahse mine from Namemaker.
NFF Pumpkin & Cream Cheese Cake Roll
Cake Ingredients
3 eggs, slightly beaten
2/3 cup canned packed pumpin
2/4 cup flour
2 tsp. cinnamon
1 tsp. nut
meg
1/2 tsp. salt
1 cup. sugar
1 tsp. pumpkin pie spice
1 cup chopped walnuts
Instructions: Line jelly roll pan with parchment paper and lightly spray with Pam and dust with flour. Preheat oven to 375.
Beat eggs an dsugar until fluffy. Add pumpkin and beat well. Sift dry ingredients and fold into mizture. Pour mixture into prepared pan and spread carefully. Spinrkle with chapped nuts. Bake at 375 for 15 minutes.
Loosen cake from pan and flip over on a towel lightly dusted with powdered sugar. Remove parchment. ROll cake and towel together. Place seam down and allow cake to cool. After cake has cooled, unroll and spread with cream cheese filling (recipe below). Re-roll cake and refrigerate until serving.
Cream Cheese Ingredients
1 cup powedered sugar
8 oz. cream cheese, softened
6 Tbsp. butter
1 tsp. vanilla
Instructions: Blend ingredients together until smooth. Spread over cake roll.
