A little over a year ago Canelle et Vanille posted these deliciously-looking Pumpkin & Gingerbread Ice Cream Sandwiches and I have been thinking about them ever since. Find her recipe here. I would love to make them. Honestly, I would. But as my husband would have predicted, I haven’t found the time. So this weekend I simplified the recipe No Fuss Fabulous style to make it more doable for …well….women on the run like me who still desire to have a pumpkin and gingerbread ice cream sandwich.
I purchased gingerbread sugar cookies from my local Costco, as well as some Pumpkin ice cream from my local Creamery, Braums, here in Texas. Pumpkin ice cream is available at many grocery stores as well (see below). I then simply placed a small scoop of pumpkin ice cream onto one gingerbread sugar cookie and then sandwiched it with a second cookie. They tasted delicious. I served it with hot cocoa and the kids loved it. Not nearly as gourmet as Canelle et Vanille’s version, but still a very tasty autumn treat!
